Home Economics 101

As part of my "Mom Duties", I volunteered to bake, once a month, for Zoe's "snack recess" at school. Well, this month, we had to make brownies. Not difficult, right? I mean, it's pretty simple, actually: Open box. Pour mix in bowl. Add water. Add oil. Add eggs. Stir. Pour into pan. Bake in oven. Cool. Cut. Put in little zip lock baggies. Send to school.

I got a little caught up on the "CUT" step.

Seriously! Am I a moron? Why can I not cut brownies? I felt compelled to send a note with the brownies, "I'm sorry it looks like a 2 year-old cut these brownies. Apparently, I missed Day #1 of Home Ec when they taught us how to cut the brownies we made."

Were they still warm when you cut them? Try using a plastic knife next time....my sister-in-law taught me that and it works!

Lol oh this used to happen to me too, but Salli is right about the plastic knife!! Do it while they are still warm but not straight out of the oven (if you can touch the pan without howling, you're good to go). And wipe the knife clean after each cut so that you don't get random crumbs stuck to it.

Another good tip is to line the pan with parchment paper that overhangs about an inch or so all around so you can just lift them up and then slice. But make sure it's parchment paper and not wax. Wax paper is not for baking; it melts and smokes up the whole kitchen (also learned the hard way...) ;)

Oh! And because I'm addicted to this stuff, a good way to dress up box brownies is to replace the regular oil with olive oil and add a tablespoon of almond extract. It gives it this killer extra flavor that people can never place but invariably love. (It's my favorite "cheat")

Also, remember that powdered sugar covers all manner of sins... lol regardless of cutting technique, these look freaking delicious and much yummier than my cottage cheese and coffee breakfast...

This happens to me every time I cut brownies. I little tip I discovered, if you will wet the knife after each cut, it somehow repels the brownie?

Oh come on, they don't look that bad! Don't get me started about the time that the cake didn't cool before I iced it :) I'm still living that one down.

As for Zoe's hair - thanks for giving me a flash in to the future!! With three girls what you want to bet I'll have this exact post in a few years except it won't have happened on a bus... Cute style though :) I think it's harder for us moms to let go of the hair then the kids.
